This delightful chamomile-infused honey cake with Rosita Bee Bread combines delicate floral notes with a creamy, honey-sweetened filling, making it a perfect centerpiece for any spring gathering. Each slice offers a soft, aromatic crumb and a subtle crunch from the bee bread topping. 

 

Ingredients

 

• Cake Batter: 200g softened butter, 150g sugar, 50g honey, 4 eggs, 3 tbsp milk, 150g flour, 100g ground almonds, 1 tsp baking powder, 1/4 tsp salt

• Chamomile Tea: 4 chamomile tea bags, 150ml boiling water, 30g honey, zest and juice of 1 lemon

• Filling: 200g cream cheese, 50g honey, 1 tbsp Rosita Bee Bread

• Icing: 50g honey, 1/2 tbsp Rosita Bee Bread 

 

Method

 

1. Prepare the Batter: Cream butter, sugar, and honey until fluffy. Gradually add eggs, then mix in milk. Combine with flour, almonds, baking powder, and salt. Pour into a prepared pan.

 

2. Bake: Bake at 180°C for 40 minutes or until golden. Let cool.

 

3. Infuse Tea: Steep tea bags in boiling water for 15 minutes, then mix in honey, lemon zest, and juice. Let cool.

 

4. Make Filling: Blend cream cheese, honey, and Rosita Bee Bread until smooth.

 

5. Assemble Cake: Slice the cake in half, drizzle both halves with chamomile tea, and spread filling on the bottom half. Place the top layer over it.

 

6. Finish with Icing: Combine reserved tea with honey and pour over the cake, topping with a sprinkle of Rosita Bee Bread.
