Super 7 Salad

• Makes: 2 servings

 

Named super 7 as it contains 7 top foods for a nourished brain; 

 

• Eggs 
• Avocado 
• Broccoli 
• Spinach 
• Walnuts 
• Coconut Oil 
• Extra Virgin Olive Oil 

 

This delicious salad is a great mix of colours, textures and flavours. The added bonus is it only takes 15 minutes to make. 

 

INGREDIENTS 

 

• 2 medium eggs 

• 200g tenderstem broccoli 
• 50g baby spinach leaves 
• 1 large carrot 
• 200g cauliflower, coarsely grated 
• 1 large avocado 
• 20g walnuts, roughly chopped 
• 40g pomegranate seeds 
• A few leaves of mint, chopped 
• Sea / himalayan pink salt 
• Extra virgin olive oil 
• Coconut oil 

 

METHOD  

 
1. Add 2 eggs to a saucepan, pour in boling water to cover, and boil for 7-8 minutes. Once cooked remove and set aside.  


2. While the eggs cook, prep the other ingredients; Grate the cauliflower/pulse in food processor to make the cauliflower rice. Make the carrot ribbons using a juliene peeler (or use a standard vegetable peeler as pictured).  


3. Steam the broccoli for 4-5 minutes. At the same time heat the coconut oil in a pan then add the cauliflower rice, salt and mint and cook for 4 minutes, stirring throughout. Turn off the heat and add the pomegranate seeds and walnuts.  


4. Arrange the spinach leaves, carrot and avocado on plates.  


5. Peel the eggs, cut them in half and add to the plate along with the broccoli and the cauliflower rice. Drizzle with a little olive oil and a sprinkling of salt.
